Hacettepe University Faculty Member Prof. Dr. Vural Gökmen has become the top of the world food engineering literature with his discoveries on carcinogens and the effects of foods on emotions and antioxidants.
Gökmen stated that he carried out his research under the roof of Hacettepe University "Food Quality and Safety Research Group" and that the group focused its research on 3 subjects.
Pointing out that the most popular carcinogenic substance is "acrylamide", Gökmen said that 20 years after the discovery of this substance, it still occupies the agenda of the scientific community. Gökmen stated that the research groups carried out studies that contributed to the international literature on the formation of acrylamide.
